Whole muscle beef, trimmed by hand - real cuts of meat, not ground and pressed back into a strip the way most jerky is made. Every piece gets a dry rub, goes on the rack by hand, and spends hours over hickory in the smokehouse here on site. Smoked, never dehydrated.
That is why it tastes like beef and not just like seasoning. If somebody in the house finds the original too peppery, this is their bag.

We ship our sausage, beef jerky, and Southern specialty foods nationwide from our USDA plant. Orders placed by 1:00 PM ET Monday through Thursday ship the same or next business day. We do not ship Friday through Sunday so nothing sits in a distribution warehouse over the weekend.
Every cold shipment includes insulated packaging and enough dry ice or gel packs to keep your order cold through a two-day transit. Delivery typically runs 2 to 4 business days after shipment.
