Stripling’s Fajita Seasoning is the deciding factor between average fajitas and the ones which make friends RSVP sooner. And though they can be served year round, we recommend fajitas in the fall (or when the weather turns cool) and you’ve planned a long day of watching all the football games. Marinate the meat the night before if you don’t want to waste game-day time, and then throw the meat on the grill during half-time. (See recipe below).
Fall Football Fajitas
- 1/2 c. olive oil
- 1/4 c. lime juice
- 1 tsp. lime zest
- 1/3 c. red wine vinegar
- 1/4 c. chopped onion
- 2 tsp. Stripling’s Fajita Seasoning
- 4 individual cloves garlic, minced
- 2 lbs. skirt steak
- 10-12 flour tortillas
Mix first 7 ingredients and use as a marinade after pounding steak to 1/4 or 1/2 thickness. Allow steak to marinate in refrigerator for at least 6 hours. Cook steak quickly over very hot grill, then slice into thin strips. Serve steak inside tortillas that have been wrapped in foil and cooked for 10-15 minutes at 325 degrees. Add in chosen enhancements such as cooked bell peppers, guacamole, sour cream, and salsa or picante sauce. *1 large container of Stripling’s Fajita Seasoning will meet the recipe requirement and leave a hearty amount remaining for other uses!
